I can’t re-invent the wheel. Heck, I don’t even remember where I put the wheel half the time. We eat dinner together every night. I love to cook but like everyone I need some easy inspiration and something different once in awhile.
Have you ever stood in front of the open freezer, sigh and draw a blank? We have special dinners around here but week nights are on a regular playlist. Chicken legs, Tacos, Spaghetti…I like to mix things up a bit so I tried this on Meatloaf Monday.
Untidy Joseph Meatloaf
1 red bell pepper chopped
2 ribs celery chopped
1 med onion chopped
2 carrots shredded
1 clove garlic chopped
1 Tablespoon tomato paste
1 to 1/2 lb ground beef, turkey or venison
1/2 cup bread crumbs
2 eggs
Sloppy Glaze
1 cup ketup
1/4 cup Worchestishire sauce
1/2 cup dark brown sugar
So I got out my frozen meat to thaw and I chopped my veg. I sautéed in a large skillet with a bit of olive oil until soft and added my tomato paste and a sprinkle of salt and pepper. I removed from the pan and chilled in the fridge. Cold veg into cold meat.

Time to mix.
We eat venison here at the Hanson Mansion. Meatloaf is a great way to make it delicious. You can use whatever you make your Sloppy Joe’s out of.
I use prepared plain bread crumbs and they work just fine. Add my chilled, softened veg and 2 fresh eggs from my gals up the hill.
I mix with my hands and shape into a loaf. I place into an oven preheated to 400 degrees and lower the temp to 350. I find this gives my lofty loaf a great crust without a dry or gooey center.
In a sauce pan combine the Sloppy Glaze ingredients, warm on low heat until it combines and just starts to bubble. 30 min into baking time spoon over top of ‘ole Joe and return to oven for 15 to 20 min more.
