Corn Beef & Cabbage Stoup

I’m pretty sure come the 17th of March that homes all across America will have that “cooked cabbage” smell going on. Thankfully the dish tastes way better than it smells. Just sayin’.

I love a big ole fatty brisket and I feel like the veg in this meal helps to counter act. My family loves soup and so I decided to make this traditional dish into a “stoup” it’s thick and has a lot going on…

There are two ways to cook your brisket. The method I used for tonight’s meal – I wouldn’t repeat. I would go back to the low and slow, in a cooking bag of yesteryear. Like literally here is a pic from last year and my sweet, fall apart, melt in your mouth meat.

I was in a hurry, (when am I not?) and I  followed the directions on the package. Cover with water, bring to a boil, turn to low for and hour and a half.

I don’t like the look of gray meat, I just don’t. So I take it out after an hour and roast in the oven (no bag) for another half hour at 350. The house smells really good and the meat looks amazing. However, it’s tough, “meat gum”!

I transferred the water that I boiled the brisket into a bowl and began to sweat the onion and garlic. I added back in the water, brought it to a boil and threw in small Yukon golds sliced all the same size. After a few I add in the shredded carrot and bag of coleslaw mix. Oh a couple bay leaves too. Remove those before you serve it, nobody wants that.

I cube my brisket and add it in, turn it to low and pray to St. Patty that it will tenderize…

It does the trick. I cheated and picked up a loaf of Shepherd’s bread to dip and as a side. It’s Vienna dough in a round. Still has some flour on top … so artisan.

Like some kind of lucky charm, the WHOLE family ate it. Even my 9 year old, that tries to be on a “beige” diet (only eats things that are neutral colored) finished her bowl!

And since there is snow on the ground and the temp is negative 90, this stoup hits the spot.

Mix it up this holiday and don’t forget to watch one of my favorite movies; The Quiet Man. Staring Maureen O’Hara and John Wayne.
