Feed My Starving Children

“Mom I’m hungry”  I hear that before I even get the dishes done. I have 3 thriving, nourished, spoiled, healthy sons. I am blessed. Blessed to have things some women never dream of. Clean water, a home, medicine and food.

Our church had a fundraiser last week for this wonderful charity fmsc.org. A raffle and bake-off to raise money for a food packing event we will participate in this March.

The boys, the Hubs and I all baked away a Saturday for the bake-off, this is what we made.

Jonah’s Brownie Snowballs

INGREDIENTS

1 cup Ghirardelli Semi-Sweet Chocolate Baking Chips  
1/2 cup (1 stick) unsalted butter, cut into pieces
1 cup firmly packed light or dark brown sugar

1/4 cocoa
1 teaspoon pure vanilla extract

1/4 cup coffee

2 large eggs

3/4 cup plus all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt

1 cup white chocolate chips

2 teaspoons veg oil

1 cup sweetened coconut or white cookies sprinkles

INSTRUCTIONS

Preheat the oven to 350°F. Butter muffin tin. In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the chocolate and butter, stirring occasionally until smooth. Remove the pan from the heat and let cool to room temperature. Stir the brown sugar and vanilla into the chocolate mixture. Add the eggs and mix well. In a bowl, sift together flour, cocoa baking powder, and salt. Slowly fold the flour mixture into the chocolate mixture, mixing well until blended.  Pour the batter into the prepared pan. Bake for 20 minutes, until a tester comes out clean. Remove from the oven and cool for at least 10 minutes. Take them out of the pan, place the stick and park them in the freezer 30 min. Melt white chocolate chips and oil in microwave 30 seconds at a time stirring. Dip frozen brownies in white chocolate to coat and roll in coconut or sprinkles. Allow to dry (We stuck them in styrofoam) then wrap in cellophane.

 Noah’s Snowman brownies

Mix recipe above. Pour batter into buttered 6 inch and 8 inch round pan. Bake 25 to 30 min. Allow to cool completely. Dust with powered sugar and pull out your cookie sprinkles and have fun!

Erik’s Black Walnut Fudge

what you need

3
cups  sugar
3/4
cup  butter or margarine
1
small  can (5 oz.) evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)
1
pkg.  (12 oz. )  Semi-Sweet Chocolate chips
1
jar  (7 oz.) JET-PUFFED Marshmallow Creme
1
cup  chopped Black Walnuts
1
tsp.  vanilla

LINE 9-inch square pan with foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in 3-qt. saucepan on medium heat, stirring constantly. Cook 4 min, stirring constantly. Remove from heat.

ADD chocolate and marshmallow creme; stir until melted. Add nuts and vanilla; mix well.

POUR into prepared pan; spread to cover bottom of pan. Cool completely. Use foil handles to lift fudge from pan before cutting into squares.

Sara’s Butter Brown Sugar and Bacon Up-side-down cake with Maple frosting

1 box your favorite yellow cake mix, prepared according to directions.

2 3 oz packages real bacon bits

1 stick bitter

1 cup dark brown sugar

Melt your butter and pour 1/2 into the bottom of each pan. Divide brown sugar and sprinkle over butter. Toss your bacon bits and pour your cake batter over. Bake according to directions. When finished, turn one cake over onto a serving plate immediately (Bacon side up) It is hot–be careful. Allow the second cake to cool just enough to handle. Remove from pan and carefully lay it on the other layer (Bacon side down).

Maple Frosting

1 stick butter

1 box powered sugar

1 Tablespoon real maple syrup

1 Tablespoon milk

Mix, frost your cake and enjoy.

Sara’s Chocolate Chip Peppermint Loaf

Ingredients

1 stick soften butter

1 cup sugar

2 eggs

1 1/2 cup flour

1/2 cup baking cocoa

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

1 teaspoon vanilla

1 teaspoon peppermint extract

1 cup dark chocolate chips or chunks

1 cup buttermilk

Mix and pour into a buttered loaf pan. Bake at 325 for 40 to 50 minutes. Dust with powered sugar if you want to be fancy.

This gal won first prize in the bake-off with these babies. 76 entries and we got to taste most of them! We didn’t win the $10,000.00 in the raffle but we went home with grateful hearts.

I loved baking with my boys, talking about the charity and sharing treats with the folks at church. I will show you the packing event when we pack food for starving children.
