Happy New Year Slicers! It was a busy and wonderful Holiday season for the Hubby and I, and we are looking forward to 2014. We were blessed to be able to spend time in Iowa and Florida with both of our families this Christmas. We had a lot of laughs, love and of course, good food. I have been indulging for a month or so now, and am not quite ready to get back to the healthy eating just yet…maybe Monday. Bring on the breakfast casserole!
The hubby’s family has this breakfast casserole every Christmas morning. This year I made it, and it is oh so delicious and super easy. You prepare it the night before, stick it in the fridge, and bake it in the morning while you enjoy your coffee.
1 lb. Pork Sausage
4 Eggs
1 tsp. Ground Mustard
1/2 tsp. Salt
2 cups Milk
4 Slices Bread
8 oz. Shredded Mild Cheddar Cheese

Brown Pork Sausage in skillet on medium heat until fully cooked. Cool and drain. In large bowl whisk Eggs, add Ground Mustard, Salt, Milk and mix all together. Toast Bread, then pull apart into 1″ pieces. Toss into greased 13 x 9 baking dish. Add cooked Pork, Cheese and Egg mixture. Mix all together until bread and meat are evenly coated. Cover pan and place in refrigerator overnight.

In the morning, preheat oven to 350, bake dish covered for 45 minutes. Uncover, reduce temp to 325 and bake an additional 30 minutes. Serve warm and enjoy with those you love, preferably in pajamas.
