Once upon a time ago I was the lunch lady at a small Christian school for a semester. I developed the recipes, shopped for the food and made EVERYTHING from scratch. I did this because at the time my 2 little girls went to school there and they needed someone.
There was one dish in particular that the kids would devour and the parents would come to me and ask, “what’s this meatball you make that my kids love and request that I make?”
It was easy, a taste of Thanksgiving… in a ball.
I made it last night. I was roaming the aisles of the local grocery, I was uninspired and I remembered the ease and taste of this dish.
2 lb Ground turkey
2 Eggs
1/4 c Parmesan cheese + 1/2 c mozzerella or colby jack
1 tbl sp Minced onion
some S&P
1 tbl sp Dijon mustard
1 Package, turkey stuffing mix
1 tbl sp minced garlic
Mix it all together (as you can see I bought these gloves in bulk)
Make 3 to 4 oz balls. These are good sized meat balls. I grease with butter, it just tastes better…

Bake 375 for 40 mins.
I used 2 packages turkey gravy mix for dipping.
Sometimes I serve this with butter noodles or mashed potatoes and corn or even baked potatoes and green bean casserole.
Who says you have to wait for Thanksgiving dinner to enjoy the smell and taste of the best Holiday around.
