We sisters were chatting this week and found out meatloaf was on the menu for all of us. We thought it might be fun to show you how the 3 of us do such different things to the same dish.
Sara’s slice…
Glazed Venison Meatloaf (makes 2 loaves)
3 lbs ground venison ( Of course you can use beef, pork or turkey)
1 box StoveTop stuffing Whole Wheat Chicken flavor
1 envelope Onion Soup Mix
1 med onion( grated over the meat)
2 eggs
1 tablespoon black pepper
2 tablespoons Worchestshire sauce
Mix and form into a loaf. I love squoooshzing the meat with my fingers… I grate my onion to add moisture. I bake at 375 on a foil lined baking sheet. Loaf pans never worked for me. 30 minutes. Pour over your glaze and bake 15 minutes more. I let it rest 10 minutes or so before slicing.
Glaze
1 cup ketup
1/4 cup brown sugar
2 tablespoons Worchestashire
Simmer in a small sauce pan until sugar in desolved. Pour over your loaf and bake 15 more.
I made one for us for dinner and one for the freezer for a busy night or to share with a friend. We had smashed red potatoes (we like the skin!) and sugar snap peas.
Amy’s slice…
Maple Pork and Lean Sirloin Loaf (think ham balls only instead of balls, a loaf)
1 lb ground maple pork (look for it in the breakfast meat area of your favorite grocery store)
1 lb 96/4% lean ground sirloin
1 package of saltine crackers, crushed
2 large eggs
4 oz jalapeno havarti chesse (you shred, it’s more moist that way)
1 tablespoon black pepper
2 tablespoons Worchestshire sauce
1 teaspoon crushed red pepper
1 teaspoon onion powder
Mix it (I wear gloves) form into a loaf. Bake at 350 in a greased glass loaf pan. 45 minutes. Pour over your glaze and bake 10 minutes more.
Glaze
2 tbl maple syrup
1/4 cup brown sugar
2 tablespoons Worcestershire
2 tbl cider apple vinegar
1/4c ketchup
a couple shakes of garlic powder, onion powder, salt & cayenne pepper
I served this up with mashed potatoes and buttery corn.
Comfort food at it’s best. Lucy and Lyla liked it but then again, Two Out Of Three Ain’t Bad...
Hannah’s slice…
Healthy Turkey Meatloaf that Even the Hubby Likes
Loaf ‘O Meat:
1 lb. Ground Turkey
1 1/2 Whole Wheat Bread Slices Blended in Blender or Food Processor into Crumbs
4 Cloves Garlic
3 Tbsp Diced Parsley
1 Egg
1/4 Cup BBQ Sauce
1 Tbsp Worcestershire Sauce
1 Tbsp Honey
1 Tbsp Brown Mustard
S&P to Taste
Glaze:
3 Tbsp BBQ Sauce
1 Tbsp Honey
1 Tbsp Worcestershire Sauce
Throw it all in a large bowl and mix together. Form into a loaf and drizzle glaze on top. Bake at 350 on greased (I use 0 calorie cooking spray) pan for 45-50 minutes. I served with mashed red potatoes (boiled 6 small red potatoes, toasted some diced garlic with a little olive oil and mashed with a couple of dollops of sour cream, about a 1/2 cup of milk and S&P) and green beans. As you can probably tell, my recipe is for 2-4, depending on appetite. Double the recipe for a family or for more leftovers.
Well, there you have it. Meatloaf 3 ways in 3 states by 3 sisters. Enjoy! What is your secret to meatloaf magic?
Sincerely, Amusingly and Honestly,
Us
