Having Frank N Stein for Dinner

frankA few million years ago, before I has any goblins of my own, I helped my sister-in-law with a Halloween Party for her monsters. I remember trying to cook and clean and carve pumpkins, supervise and entertain a bunch of elementary age spooks and clean up the mess. Eeeeek! I also remember making a Frankenstein Tamale Pie.  This week I needed to bring a dish to a party, feed my family and entertain some guests and I thought I would give this another try.

Frankenstein Tamale Pie

Like almost everything good in life–it starts with onions, garlic and ground beef. I throw some green peppers in the cauldron too.

The idea here is to make your favorite chili and top it with your favorite cornbread…don’t be scared.

I use oregano, dried garlic and onion as well as cumin, chili powder, black pepper and salt. Then I add 1 can chopped green chilies and 1 can chopped tomatoes. I thought this was the best time of year to get my kids to eat something called “kidney beans” so I added a can of those and black beans as well.  This smells pretty good too!

Now, the next step is your corn bread. Nothing to fear. Use your favorite mix and I add 1 tablespoon of sugar. See all my pretty eggs? (Thanks to our dear friend Katfish)!

Spoon your chili filling into a prepared baking dish, top with your corn bread mix…mixed.

Now the spooktacular part…decorating!

I used what I had in the fridge. I had peppers, olives, radish, onions and carrots. Use your talent and imagination. Don’t forget the unibrow and neck bolts…gotta have neck bolts. Bake at 400 for 13 to 18 min.
