Did you ever stand in front of the open fridge wondering how you were going to pull off dinner? I am always trying to do more with less–faster! The hubs and the boys have been cutting down trees all day and big flakes are falling from the sky. I need something hot and fast that will stick to our ribs. This is what I came up with.
Hot Potato Super Soup
(No, not packed with Kale or Red Bull–just 5 simple ingredients and it was ready to eat in 12 minutes!)
1 medium onion chopped
1 box chicken broth
1/2 cup half&half (or whatever milk you like)
8 oz cubed ham
(1 Tbs butter or olive oil and salt and pepper too)
Chop your onion and sweat it in a large pot with your butter or oil. Finely chop your potatoes, the smaller the pieces the faster they cook. Toss those in with the onion and stir to coat with the oniony goodness. Pour in your stock and bring to a boil. Boil 4 minutes or until your ‘tatoes are tender. Reduce to a simmer and mash with your masher. Add your ham and H&H. Season with salt and pepper and stir to combine. Ding Ding dinner is served.

I garnished with a bit of parsley that I saved from the frost in the garden and a bit of cheddar–we are in Wisconsin you know. This fed the 5 of us with seconds and I froze 2 servings to share.
This is light and creamy, warm and filling!
