Black and White (Chicken Chili that is)

 This month we just keep talking about  Chicken! I love Chili-I love Chicken-I love Black beans-I have a food addiction. Some of you might remember my crushing blow at the Church Chili cook-off…I hated the winning chili, but second place was this delicious White Chicken Chili and it was made by this cute little shiny gal who was 9 months pregnant…had to love her!

I have thought about that Chili and when I was making plans to go cook for my sister…it seemed like the perfect time to bring it back! Sadly, White Chicken Chili is not my original idea–I wish it was! I love to add black beans too, I sneak in some grated carrot and finely diced celery–cause I can, with these kids every veggie counts! White Chicken Chili seems a bit more elegant, a little more fufu than football.

 White Chicken Chili is not hard. A couple of Chicken Breast, a box of stock, 2 cans green chili’s, 2 cans White  beans, I add one can of black beans as well.  Onion, garlic, grated carrot. You can get a packet of seasoning or use garlic, cumin, chili powder, pepper…whatever you like. Bring that all to a boil, reduce to a simmer…Now the fun part! THE TOPPINGS

  • Sliced ripe avocados
  • diced green or red onion
  • sour cream or mexican crema
  • Frito’s or Tortilla chips
  • French fried onions
  • Cilantro
  • Fresh Jalapeno
  • Lime
  • Cheese or Queso Fresco
  • Salsa Verde
  • Hot Sauce

How can you go wrong with a” make it the way you like it meal” for a weeknight or a party? Now blend up something fruity and have your own fiesta!  Sisterslice Style!
